01 2 boneless skinless chicken breasts
02 1 1/4 cups white long grain rice
03 2 cups fresh broccoli florets
04 2 cups shredded cheddar cheese

05 10.5 oz Condensed Cream of Chicken Soup
06 ½ cup milk
07 ½ cup sour cream
08 2 1/2 cups chicken broth

→ Seasonings

09 1 teaspoon Italian Seasoning
10 1/2 teaspoon dried thyme (optional)
11 1/2 teaspoon garlic powder (optional)
12 Salt and pepper to taste

→ Topping

13 1 cup Ritz crackers, crushed
14 2 Tablespoons melted butter

Instructions

Step 01

Preheat oven to 350°F. Cut chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper.

Step 02

Brown seasoned chicken in butter until golden, about 5 minutes. Remove and set aside.

Step 03

Bring broth, oil, and rice to boil. Reduce heat, cover and cook 6 minutes. Add broccoli, cook 9 more minutes.

Step 04

Mix chicken, soup, milk, sour cream, seasonings, and half the cheese with rice mixture.

Step 05

Transfer to 9x13 dish, top with remaining cheese. Cover and bake 15 minutes.

Step 06

Mix crushed crackers with butter, sprinkle over casserole. Bake uncovered 10 more minutes.
