Cheesy Chicken Broccoli Casserole (Print Version)

# Ingredients:

01 - 2 boneless skinless chicken breasts
02 - 1 1/4 cups white long grain rice
03 - 2 cups fresh broccoli florets
04 - 2 cups shredded cheddar cheese

→ Sauce Base

05 - 10.5 oz Condensed Cream of Chicken Soup
06 - ½ cup milk
07 - ½ cup sour cream
08 - 2 1/2 cups chicken broth

→ Seasonings

09 - 1 teaspoon Italian Seasoning
10 - 1/2 teaspoon dried thyme (optional)
11 - 1/2 teaspoon garlic powder (optional)
12 - Salt and pepper to taste

→ Topping

13 - 1 cup Ritz crackers, crushed
14 - 2 Tablespoons melted butter

# Instructions:

01 - Preheat oven to 350°F. Cut chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper.
02 - Brown seasoned chicken in butter until golden, about 5 minutes. Remove and set aside.
03 - Bring broth, oil, and rice to boil. Reduce heat, cover and cook 6 minutes. Add broccoli, cook 9 more minutes.
04 - Mix chicken, soup, milk, sour cream, seasonings, and half the cheese with rice mixture.
05 - Transfer to 9x13 dish, top with remaining cheese. Cover and bake 15 minutes.
06 - Mix crushed crackers with butter, sprinkle over casserole. Bake uncovered 10 more minutes.
