I've been baking these Snickerdoodle Chai Sandwich Cookies every holiday season since discovering how perfectly the cozy chai spices pair with classic snickerdoodle flavor. The buttery cookies filled with creamy spiced centers have become my most requested holiday treat. Everyone who tries them says they taste like Christmas in cookie form.

The Perfect Holiday Cookie

These aren't your average sandwich cookies. The snickerdoodle shortbread just melts in your mouth while the chai filling adds this incredible spicy sweetness that makes you keep reaching for more. When I add the white chocolate drizzle and gold sprinkles they look so festive on my cookie platters. I love curling up with a few of these and a steaming mug of chai tea.

What You'll Need

  • Shortbread base: Your basic butter flour and sugar plus cinnamon to give it that snickerdoodle magic.
  • Cinnamon sugar: I sprinkle this on before and after baking for extra sparkle and spice.
  • Chai spice filling: A dreamy mix of butter cream and warming spices like cinnamon ginger cardamom and cloves.
  • White chocolate: Just a little drizzle makes these cookies look extra special.
  • Gold sprinkles: These are optional but they make the cookies look absolutely gorgeous.

Spread that spicy filling on one cookie then top with another to make sandwiches.
Make Them Pretty:
Drizzle with melted white chocolate add some gold sprinkles and let them set before serving.

My Baking Secrets

Make sure your butter is soft before starting it makes such a difference in the dough. I always pop my dough in the fridge for a bit makes it so much easier to work with. Play around with the chai spices until you find your perfect blend.
