Tex-Mex Beef and Sausage Pie (Print Version)

# Ingredients:

01 - 1 pound ground beef (85/15).
02 - 1/2 pound hot Italian sausage.
03 - 3 tablespoons olive oil.
04 - 2 1/2 cups diced white onion.
05 - 2 cups diced green bell pepper.
06 - 1 jalapeño, minced.
07 - 2 tablespoons minced garlic.
08 - Seasonings (salt, pepper, cumin, coriander, chili powder, oregano).
09 - 10 ounces Rotel tomatoes, drained.
10 - 3 large eggs.
11 - 1 cup Greek yogurt.
12 - 1/2 cup flour.
13 - 2 teaspoons baking powder.
14 - 2 1/2 cups mixed shredded cheeses.
15 - 1 cup diced scallions.
16 - 1/4 cup cilantro.

# Instructions:

01 - Line springform pan with parchment, grease well.
02 - Brown beef and sausage, drain fat.
03 - Sauté vegetables with seasonings until crisp-tender.
04 - Mix eggs, yogurt, flour, baking powder for pancake-like batter.
05 - Alternate batter, meat mixture, cheese; top with herb-cheese batter.
06 - Cook at 350°F for 45 minutes, broil to brown.
