Your Favorite Fast Food Made Better at Home

After countless attempts to recreate that iconic Taco Bell flavor I finally nailed this Enchirito recipe. It brings back those drive thru memories but tastes even better with fresh ingredients and plenty of melty cheese. My family actually prefers this version to the original.

Simple Yet Special

This recipe hits all the right spots with seasoned beef beans and lots of cheese. I love making it because it's so easy yet feels like something special. My kids get excited when they see it bubbling in the oven.

What You Need

Grab a pound of ground beef and your favorite taco seasoning. You'll need refried beans soft flour tortillas enchilada sauce lots of shredded cheddar and a fresh onion. I always keep black olives and sour cream on hand for topping these just like the restaurant version.

Let's Get Cooking

First brown your beef and add the seasoning. While that's going warm up those refried beans they spread better when they're heated. Now comes the fun part layering everything into the tortillas. I spread beans first add the meat some onions then roll them up. Pour that rich enchilada sauce over top load on the cheese and let the oven work its magic.

Serving Time

I love watching everyone's faces when this comes out of the oven all bubbly and cheesy. Set out bowls of sour cream and olives so everyone can dress up their own. Add some chips and salsa on the side and dinner is ready.

My Best Tips

Make sure your tortillas are nice and warm before rolling they'll be more flexible that way. I always grate my own cheese it melts so much better than the pre shredded stuff.

Mix It Up

Sometimes I swap in chicken or make them vegetarian with extra beans and veggies. Play around with different enchilada sauces too. My spice loving friends add extra jalapeños on top.

Save Some For Later

These keep beautifully in the fridge for a few days just reheat them in the oven to keep that crispy edge. You can even freeze them for busy nights just wrap them well.

Everyone Can Enjoy

My gluten free friends love these just as much using corn tortillas. Just check your seasoning and sauce to make sure they're gluten free too.

Always a Hit

Every time I make these they disappear fast. There's something about that combination of flavors that just works. It's comfort food at its finest.

Complete Your Meal

We love these with fresh guacamole and Mexican rice on the side. A cold margarita or lime spritzer makes it feel like a real fiesta.

Plan Ahead

I often prep these in the morning and pop them in the fridge. When dinner time rolls around all I have to do is bake them. It's such a time saver on busy days.
