Raspberry Cheesecake Bites (Print Version)

# Ingredients:

01 - 1 cup graham cracker crumbs.
02 - 3 tablespoons sugar (for crust).
03 - 4 tablespoons butter, melted.
04 - 16 ounces cream cheese, softened.
05 - 1/2 cup sugar (for filling).
06 - 2 large eggs.
07 - 1 teaspoon vanilla extract.
08 - 1/2 cup raspberry preserves.
09 - Fresh raspberries for garnish.

# Instructions:

01 - Heat oven to 325°F.
02 - Line muffin tin with paper liners.
03 - Mix crumbs, sugar, melted butter.
04 - Press 1 tablespoon crumb mix into each cup.
05 - Beat cream cheese and sugar until smooth.
06 - Add eggs one at a time, mixing well.
07 - Stir in vanilla extract.
08 - Spoon mixture over crusts.
09 - Drop preserves on top.
10 - Swirl with toothpick.
11 - Bake 20-25 minutes until set.
12 - Cool completely.
13 - Top with fresh raspberries.
