Pizza Enchiladas Ground Beef Pepperoni (Print Version)

# Ingredients:

→ Filling

01 - 450 g ground beef
02 - 120 g onion, finely chopped
03 - 2 cloves garlic, minced
04 - 0.5 teaspoon Italian seasoning
05 - 0.5 teaspoon red pepper flakes
06 - 0.25 teaspoon salt
07 - 0.25 teaspoon black pepper
08 - 20 slices pepperoni, chopped
09 - 150 g mozzarella cheese, shredded
10 - 40 g Parmesan cheese, grated
11 - 8 small flour tortillas

→ Sauce

12 - 480 ml marinara or pizza sauce
13 - 0.5 teaspoon dried oregano
14 - 0.25 teaspoon garlic powder

→ Topping

15 - 100 g mozzarella cheese, shredded
16 - Additional pepperoni slices
17 - Fresh basil or parsley, chopped (optional)

# Instructions:

01 - Preheat oven to 190°C.
02 - In a large skillet over medium heat, cook ground beef with onion, garlic, Italian seasoning, red pepper flakes, salt, and black pepper until beef is browned. Drain any excess fat.
03 - Incorporate the chopped pepperoni into the skillet. Cook for an additional 1–2 minutes.
04 - Remove from heat, then stir in shredded mozzarella and grated Parmesan until well combined.
05 - In a separate bowl, mix together marinara or pizza sauce, dried oregano, and garlic powder.
06 - Lightly grease a 23 x 33 cm baking dish and spread 120 ml sauce evenly over the bottom.
07 - Place 2–3 tablespoons of the beef mixture onto each tortilla, roll tightly, and arrange seam side down in the prepared dish.
08 - Pour the remaining sauce evenly over the filled tortillas. Sprinkle with mozzarella and arrange extra pepperoni slices on top.
09 - Bake uncovered for 20–25 minutes, or until the cheese is melted and lightly golden.
10 - Allow to cool for 5 minutes. Garnish with fresh basil or parsley if desired.
