Pizza Enchilada Bake Delight (Print Version)

# Ingredients:

→ Filling

01 - 450 g ground beef, Italian sausage, or sliced pepperoni (or a combination)
02 - 1/2 medium onion, diced
03 - 1/2 green bell pepper, diced
04 - 1 teaspoon garlic powder or 2 garlic cloves, minced
05 - 1 teaspoon Italian seasoning blend
06 - Salt and freshly ground black pepper, to taste
07 - 120 g shredded mozzarella cheese
08 - 60 g mini pepperoni slices (optional)

→ Sauce

09 - 360 ml pizza sauce or marinara sauce
10 - 1/4 teaspoon crushed red pepper flakes (optional)

→ Enchiladas

11 - 8 small flour tortillas
12 - 120 g shredded mozzarella cheese, for topping
13 - 25 g grated Parmesan cheese
14 - Assorted toppings: sliced black olives, mushrooms, jalapeños, fresh basil or oregano (optional)

# Instructions:

01 - Preheat the oven to 190°C.
02 - Heat a skillet over medium heat and cook ground beef, Italian sausage, or pepperoni until fully browned.
03 - Add diced onion and green bell pepper to the skillet. Sauté until softened, about 5 minutes.
04 - Stir in garlic powder or minced garlic, Italian seasoning, salt, and black pepper. Cook for 1 additional minute.
05 - Remove skillet from heat. Fold in 120 g shredded mozzarella and mini pepperoni slices if using.
06 - Spread 60 ml of pizza sauce evenly across the bottom of a 23 x 33 cm baking dish.
07 - Fill each tortilla with 2 to 3 tablespoons of the meat mixture. Roll tightly and place seam-side down in the baking dish.
08 - Pour remaining pizza sauce over rolled tortillas. Sprinkle the top with remaining mozzarella, Parmesan cheese, and any preferred toppings such as sliced olives, mushrooms, or jalapeños.
09 - Cover with foil and bake for 20 minutes. Remove foil and continue baking for an additional 10 minutes until the cheese is golden and bubbling.
10 - Garnish with fresh basil or oregano if desired. Serve hot with a side salad or garlic bread.

# Notes:

01 - Ensure tortillas are rolled tightly to prevent filling from spilling. Enchiladas can be prepped ahead and refrigerated before baking.
