PB Ice Cream Truffles (Print Version)

# Ingredients:

01 - 2 cups heavy cream.
02 - 1/2 cup natural peanut butter.
03 - 4 tablespoons granulated Stevia.
04 - 1 teaspoon vanilla extract.
05 - 1 pinch xanthan gum.
06 - 6 ounces sugar-free dark chocolate.
07 - 2 tablespoons coconut oil.

# Instructions:

01 - Blend cream, peanut butter, stevia, vanilla, and xanthan gum until smooth.
02 - Pour into container and freeze until solid.
03 - Scoop into balls, freeze 1 hour on lined sheet.
04 - Melt chocolate with coconut oil.
05 - Coat frozen balls in chocolate, let excess drip.
06 - Freeze 30 minutes before serving.
