Baked Carrot Fries

# Ingredients:

2 pounds carrots, peeled and sliced into 1/4 inch thick 'fries'.

1 tablespoon oil.

Salt and pepper to taste.

1/2 cup parmigiano reggiano (parmesan cheese), grated.
# Instructions:

Toss carrot fries with oil, salt, pepper and parmesan. Spread in single layer on lined baking sheet.

Bake at 425F for 16-20 minutes until tender and lightly charred, mixing halfway.

Use mandolin for easy slicing.

Can add garlic powder for extra flavor.

Works well in air fryer.
04 -
Optional chipotle mayo dip: blend 1/2 cup mayo with 1-2 chipotles.
