Baked Carrot Fries (Print Version)

# Ingredients:

01 - 2 pounds carrots, peeled and sliced into 1/4 inch thick 'fries'.
02 - 1 tablespoon oil.
03 - Salt and pepper to taste.
04 - 1/2 cup parmigiano reggiano (parmesan cheese), grated.

# Instructions:

01 - Toss carrot fries with oil, salt, pepper and parmesan. Spread in single layer on lined baking sheet.
02 - Bake at 425F for 16-20 minutes until tender and lightly charred, mixing halfway.

# Notes:

01 - Use mandolin for easy slicing.
02 - Can add garlic powder for extra flavor.
03 - Works well in air fryer.
04 - Optional chipotle mayo dip: blend 1/2 cup mayo with 1-2 chipotles.
