Pat brisket dry and coat generously with dry rub on all sides. Wrap in foil and refrigerate overnight.

Remove from fridge 1 hour before cooking. Preheat oven to 300°F.

Place rack in roasting pan with crossed foil sheets. Place brisket fat side up and wrap loosely.

Bake about 1 hour 15 minutes per pound until internal temp reaches 180°F.

Open foil and bake additional 45-60 minutes.

Rest covered 30 minutes before slicing against the grain.
