Mint Chocolate Chip Snowball Cookies (Print Version)

# Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 2/3 cup powdered sugar, sifted.
03 - 2 1/4 cups all-purpose flour.
04 - 1/2 teaspoon salt.
05 - 1 teaspoon mint extract.
06 - Green food coloring.
07 - 3/4 cup mini chocolate chips.
08 - Extra powdered sugar for coating.

# Instructions:

01 - Line baking sheet with parchment paper.
02 - Beat butter and sugar until fluffy. Mix in flour, salt, mint extract and food coloring.
03 - Stir in chocolate chips until evenly distributed.
04 - Roll into balls, refrigerate 30 minutes.
05 - Cook at 375°F for 7-8 minutes until bottoms are lightly golden.
06 - Cool briefly, roll in powdered sugar while warm, then again when completely cool.
