Beat butter and sugar until fluffy. Mix in flour, salt, mint extract and food coloring.

Stir in chocolate chips until evenly distributed.

Roll into balls, refrigerate 30 minutes.

Cook at 375°F for 7-8 minutes until bottoms are lightly golden.

Cool briefly, roll in powdered sugar while warm, then again when completely cool.
