Mediterranean Salmon Patties (Print Version)

# Ingredients:

01 - 1 lb fresh salmon fillet or 2 (6oz) cans salmon, drained.
02 - 1 cup fresh spinach, chopped (or 1/2 cup frozen).
03 - 1/4 cup red onion, finely chopped.
04 - 2 cloves garlic, minced.
05 - 2 tbsp fresh parsley, chopped.
06 - 1 tbsp fresh dill (optional).
07 - 1/3 cup feta cheese, crumbled.
08 - 1/2 cup breadcrumbs.
09 - 2 large eggs, beaten.
10 - 1 tbsp lemon juice.
11 - 1 tsp lemon zest.
12 - 1 tsp dried oregano.
13 - Salt and pepper to taste.
14 - Olive oil for frying.
15 - Lemon wedges (optional garnish).
16 - Tzatziki sauce (optional garnish).

# Instructions:

01 - Cook salmon at 375°F for 12-15 mins if using fresh. Cool and flake.
02 - Sauté spinach 2 minutes until wilted. Cool and drain.
03 - Mix salmon, spinach, onion, garlic, herbs, feta, breadcrumbs, eggs, seasonings.
04 - Form into 3-inch patties, 1/2 inch thick.
05 - Heat oil in skillet over medium.
06 - Cook patties 3-4 minutes per side until golden.
07 - Serve with tzatziki and lemon.

# Notes:

01 - Can use fresh or canned salmon.
02 - Ensure spinach is well-drained.
03 - Can bake instead of fry.
04 - Makes great meal prep.
