Lofthouse Cookies (Print Version)

# Ingredients:

01 - 2 cups cake flour.
02 - 1/2 cup all-purpose flour.
03 - 1 cup sugar.
04 - 1/2 cup butter, softened.
05 - 1 whole egg plus 1 white.
06 - 1/4 cup butter flavored shortening.
07 - 1 1/2 teaspoons baking powder.
08 - 1/4 teaspoon cream of tartar.
09 - 1/4 teaspoon salt.
10 - 2 teaspoons vanilla extract.
11 - 1 teaspoon almond extract.
12 - Frosting ingredients (butter, shortening, extracts, powdered sugar, milk).
13 - Pink food coloring.
14 - Sprinkles.

# Instructions:

01 - Whisk flours, baking powder, cream of tartar, salt.
02 - Cream sugar, butter, shortening; add eggs and extracts.
03 - Add dry to wet ingredients gradually.
04 - Refrigerate dough 2-3 hours.
05 - Scoop, flatten to 1/2 inch thick.
06 - Cook at 375°F for 8 minutes until set but not brown.
07 - Make frosting, tint pink, frost cooled cookies and add sprinkles.

01 - Can be frozen.
02 - Don't overbake.
03 - Stores 3-4 days.
