Lime Garlic Chicken Penne (Print Version)

01 - 2 boneless, skinless chicken breasts, cut into bite-sized pieces
02 - 2 tablespoons olive oil
03 - 3 cloves garlic, minced
04 - 1 lime, juiced (about 2 tablespoons)
05 - 1 teaspoon lime zest
06 - 1 teaspoon salt
07 - 1/2 teaspoon black pepper
08 - 1/2 teaspoon paprika
09 - 1 red bell pepper, sliced
10 - 1 zucchini, sliced
11 - 1 yellow squash, sliced
12 - 1 cup cherry tomatoes, halved
13 - 1 1/2 cups broccoli florets
14 - 12 oz penne pasta

15 - 1/4 cup grated Parmesan cheese
16 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions. In the last 2 minutes of cooking, add the broccoli florets to the pot. Drain together and set aside.
02 - In a large bowl, mix the chicken pieces with lime juice, lime zest, salt, pepper, and paprika. Let it marinate for 10-15 minutes.
03 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until golden and cooked through. Remove and set aside.
04 - In the same skillet, add the remaining tablespoon of olive oil. Add garlic and cook for 30 seconds. Then add red bell pepper, zucchini, yellow squash, and cherry tomatoes. Sauté for 5-7 minutes until tender.
05 - Return the cooked chicken to the skillet with the vegetables. Add in the drained pasta and broccoli. Stir well and cook for another 2-3 minutes until everything is warmed through.
06 - Top with Parmesan cheese and parsley if using. Serve hot and enjoy!

# Notes:

01 - For a lighter version, skip the Parmesan cheese or reduce the amount of olive oil used during cooking.
