Add vegetable oil, chopped garlic, and ⅛ teaspoon salt into a medium sauté pan. Place the pan over medium heat and cook for 1-2 minutes until the garlic turns golden brown. Remove the garlic, leaving the garlic-infused oil in the pan.

Add the egg into the pan and scramble until partially cooked.

Add cooked rice, scallion, soy sauce, oyster sauce, ground black pepper, and remaining salt into the pan. Turn the heat to high and mix to combine.

Stir in the reserved fried garlic and mix thoroughly. Adjust the seasoning with additional salt, pepper, or soy sauce as needed.

Garnish with additional chopped scallions and serve immediately.
