# Ingredients:

09 - 1 cup jasmine or basmati rice
10 - 2 cups water or chicken broth
11 - 1 tablespoon lime juice
12 - 1 tablespoon chopped cilantro
13 - Salt, to taste

→ Avocado Layer

14 - 2 ripe avocados, diced
15 - 1 tablespoon lime juice
16 - Pinch of salt

→ Optional Toppings

17 - Extra chopped cilantro
18 - Diced tomatoes
19 - Crumbled cotija or feta cheese
20 - Lime wedges

# Instructions:

01 - Combine honey, lime juice and zest, olive oil, garlic, ground cumin, smoked paprika, salt, and black pepper. Coat the chicken thoroughly and let it marinate.
02 - Cook the marinated chicken in a heated skillet or pan until golden brown and cooked through. Let it rest and slice into strips.
03 - Cook jasmine or basmati rice with water or chicken broth, lime juice, chopped cilantro, and salt to taste.
04 - Gently toss diced avocados with lime juice and a pinch of salt.
05 - Layer the cooked rice, avocado mixture, and sliced chicken on a plate or in a bowl.
06 - Top with extra cilantro, diced tomatoes, crumbled cheese, and lime wedges for garnish. Serve immediately.
