Preheat oven to 325˚F and line 2 baking sheets with parchment paper

In a food processor, pulse cheese, flour and salt several times. Add cold butter cubes and pulse until crumbly. Add cold milk and pulse until dough comes together when pressed

Transfer to a lightly floured surface and roll very thin (thinner than 1/8-inch). Cut into 1-inch squares and poke a hole in each cracker with a skewer

Transfer to prepared baking sheets, sprinkle with salt, and bake for 17-20 minutes until deep golden brown on bottom. Cool completely before serving
