Crispy Homemade Cheese Crackers (Print Version)

# Ingredients:

01 - 8 ounces sharp cheddar cheese, freshly shredded
02 - 1 cup all purpose flour
03 - 1/2 teaspoon salt, plus extra for topping
04 - 1/4 cup cold unsalted butter, cubed
05 - 2 tablespoons cold whole milk

# Instructions:

01 - Preheat oven to 325˚F and line 2 baking sheets with parchment paper
02 - In a food processor, pulse cheese, flour and salt several times. Add cold butter cubes and pulse until crumbly. Add cold milk and pulse until dough comes together when pressed
03 - Transfer to a lightly floured surface and roll very thin (thinner than 1/8-inch). Cut into 1-inch squares and poke a hole in each cracker with a skewer
04 - Transfer to prepared baking sheets, sprinkle with salt, and bake for 17-20 minutes until deep golden brown on bottom. Cool completely before serving

# Notes:

01 - Store in an airtight container for up to a week. Reheat 5-8 minutes in oven if they lose crispiness
02 - Use freshly shredded cheese as pre-shredded contains anti-caking agents
03 - If using salted butter, reduce recipe salt to 1/4 teaspoon
