Healthy Banana Oat Chocolate Bars (Print Version)

# Ingredients:

01 - 1 cup (150 g) rolled oats
02 - 1 cup (25 g) puffed rice cereal
03 - 1 cup (100 g) raisins
04 - 1 cup (100 g) chopped dried apricots
05 - 1 cup (100 g) chopped walnuts
06 - 1/4 cup (30 g) oat flour (or almond flour)
07 - 1/2 teaspoon cinnamon (optional)
08 - Pinch of salt

→ Wet Ingredients

09 - 1 ripe banana (mashed)
10 - 2 tablespoons honey or maple syrup (optional, for extra sweetness)

→ Topping

11 - 80 g (2.8 oz) dark chocolate, chopped or in chips

# Instructions:

01 - In a large bowl, mash the banana until smooth. Add the oat flour, rolled oats, puffed rice, raisins, chopped apricots, and walnuts. Mix until well combined. Add honey or maple syrup if desired for extra sweetness. Sprinkle in the cinnamon and a pinch of salt.
02 - Line a small baking tray or dish with parchment paper (approx. 8×8 inches). Transfer the mixture to the tray and press it down evenly to form a compact layer.
03 - Bake in a preheated oven at 360°F (180°C) for 10-12 minutes just to set and slightly toast the oats and nuts.
04 - While the bars are cooling, melt the dark chocolate in a heatproof bowl over simmering water or microwave in 20-second bursts until smooth. Pour the melted chocolate over the baked mixture and spread evenly with a spatula.
05 - Refrigerate for at least 1 hour, or until the chocolate is fully set. Lift the mixture out of the tray using the parchment and cut into bars or squares.
