Creamy Garlic Bread Soup (Print Version)

# Ingredients:

→ Soup Base

01 - 14 ounces Day Old French Bread, cubed
02 - 8 cups Chicken Broth, reduced-sodium
03 - 1 Medium-Sized Yellow Onion, Diced
04 - 2 tablespoons Minced Garlic

→ Seasonings

05 - 2 Bay Leaves
06 - 1 teaspoon Thyme
07 - 1 teaspoon Salt
08 - Dash of Pepper

→ Finishing

09 - ½ cup Heavy Whipping Cream
10 - ½ cup Grated Parmesan
11 - 2 teaspoons Olive Oil

→ Croutons

12 - 2 cups French Bread, cut into 1″ cubes
13 - 3 tablespoons Butter, melted
14 - 1 tablespoon Minced Garlic
15 - 1 teaspoon Basil
16 - ½ teaspoon Salt

# Instructions:

01 - Preheat to 350°F. Toss bread cubes with melted garlic butter, basil and salt. Bake 15 minutes, stirring halfway.
02 - Sauté onions with seasonings in olive oil until browned. Add garlic and cook briefly.
03 - Add broth, bring to boil, reduce to simmer 15 minutes. Remove bay leaves.
04 - Add bread cubes and cream. Simmer 5 minutes until bread absorbs liquid.
05 - Blend with immersion blender until smooth. Stir in parmesan. Serve topped with croutons.
