Black Bean Brownies (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 (15-oz) can black beans, rinsed and drained (425g)
02 - 3 large eggs
03 - 3 tablespoons flavorless oil (canola or vegetable)
04 - 1 teaspoon vanilla extract

→ Dry Ingredients

05 - ¼ cup unsweetened cocoa powder (30g)
06 - ⅔ cup sugar (120g)
07 - ½ teaspoon baking powder
08 - ¼ teaspoon salt
09 - ½ teaspoon finely ground or instant coffee (optional)

→ Add-ins

10 - ½ cup semi-sweet chocolate chips (60g)

# Instructions:

01 - Preheat oven to 350°F (176°C). Puree black beans in food processor until paste-like. Mix bean puree with eggs, oil, and vanilla extract in a large bowl.
02 - In separate bowl, combine cocoa powder, sugar, baking powder, salt, and coffee if using. Add to wet ingredients, then stir in chocolate chips.
03 - Grease and line an 8x8 or 9x9 inch pan with parchment. Pour batter in and bake 30-40 minutes until edges are cooked and center is mostly set.
04 - Allow brownies to cool completely before cutting.

01 - Can be made thicker by doubling recipe
02 - Keeps in refrigerator for up to 7 days
03 - Can be frozen for up to 3 months
