Fajita Quesadilla (Print Version)

# Ingredients:

01 - 1 1/2 pounds chicken breast, sliced thin.
02 - 3 tablespoons olive oil, divided.
03 - 3 tablespoons fajita seasoning mix.
04 - 1 1/2 cups white onion, thinly sliced.
05 - 1 cup green bell pepper, sliced.
06 - 1 cup yellow bell pepper, sliced.
07 - 1 cup red bell pepper, sliced.
08 - 6 medium flour tortillas.
09 - 2 cups fiesta blend cheese, shredded.
10 - Nonstick cooking spray.
11 - Sour cream, guacamole, salsa for serving (optional).

# Instructions:

01 - Heat 1.5 tbsp oil and cook chicken with fajita seasoning 5-7 minutes until done.
02 - In same pan with remaining oil, cook onions 3-4 minutes, then peppers 3-4 minutes.
03 - Mix chicken back with vegetables.
04 - Fill tortilla half with mixture and cheese, fold over.
05 - Cook each quesadilla 1.5-2 minutes per side until golden.

01 - Can adjust stove temperature as needed.
02 - Can use pre-shredded or fresh cheese.
03 - Serve with optional toppings.
