In a shallow bowl, combine grated Parmesan, breadcrumbs, garlic powder, Italian seasoning if using, salt, and black pepper.

Dip each zucchini stick into the beaten eggs, then roll in the Parmesan breadcrumb mixture, pressing lightly to adhere the coating.

Place coated zucchini sticks in a single layer on the prepared baking sheet. Lightly spray or drizzle with olive oil. Bake in the centre of the oven for 20–25 minutes, flipping halfway through, until golden brown and crisp.

Serve hot accompanied by marinara, ranch, or garlic aioli for dipping.
