Preheat oven to 350°F (175°C). Line baking sheet with parchment paper and lightly spray with oil.

Drain excess liquid from cottage cheese using fine mesh strainer or cheesecloth to help chips crisp better.

Place small mounds of cottage cheese on prepared baking sheet. Flatten each with back of spoon to form thin rounds. Leave space between each.

Bake for 20-25 minutes until golden brown and crispy. Watch closely to prevent burning.

Let chips cool on baking sheet for a few minutes to crisp further. Transfer to serving plate.

Alternatively, spread drained cottage cheese on parchment paper. Microwave on high for 2-3 minutes until golden and crispy. Cool, then break into pieces.
