Croque Monsieur (Print Version)

# Ingredients:

01 - 1/2 cup milk.
02 - 1/2 cup cream (pure or heavy).
03 - 1 1/2 tbsp unsalted butter (25g).
04 - 1 1/2 tbsp plain flour.
05 - 1/4 tsp kosher salt.
06 - 1 pinch white pepper.
07 - 1/8 tsp nutmeg, freshly ground preferred.
08 - 4 slices sourdough bread, 1.5cm thick.
09 - 8 slices Swiss or gruyere cheese (165g).
10 - 120g ham slices, preferably smoked.
11 - 4 tsp Dijon mustard.
12 - 30g unsalted butter.
13 - 1/2 cup grated gruyere cheese.
14 - 3 tbsp finely grated parmesan.

# Instructions:

01 - Preheat oven to 200°C/390°F (180°C fan).
02 - Heat milk and cream until steaming but not boiling.
03 - Melt butter, add flour, cook 3 minutes stirring constantly.
04 - Gradually stir in hot milk mixture, add seasonings, cook until thickened.
05 - Spread bread with bechamel, layer with cheese, mustard, ham, more cheese.
06 - Cook sandwiches in butter until golden brown on both sides.
07 - Cover with remaining bechamel and cheeses, bake 15 minutes then broil 3 minutes until golden.

01 - Traditionally served for lunch in France.
02 - Use sturdy bread that can hold heavy toppings.
03 - Can be assembled ahead and frozen.
04 - Best eaten with knife and fork.
