# Ingredients:

→ Base Ingredients

01 - 4 large eggs, room temperature
02 - 1 1/2 cups whole milk, lukewarm (about 125 degrees F)
03 - 3/4 teaspoon salt
04 - 1 1/2 cups all-purpose flour, spooned and leveled
05 - 3 tablespoons melted butter, cooled slightly

# Instructions:

01 - In a blender, combine eggs, milk, and salt. Add flour and blend until smooth. Finally, blend in melted butter until mixture is frothy. Let batter rest 15 minutes while preheating oven.
02 - Heat oven to 450°F. Position one rack in bottom third of oven and another at the top. Place popover pan on a baking sheet on lower rack for 2 minutes while preheating.
03 - Remove hot pan and spray thoroughly with nonstick cooking spray, including wells and rim. Pour rested batter evenly into slots, filling almost to the top.
04 - Bake at 450°F for 20 minutes without opening the oven door.
05 - Reduce heat to 350°F (without opening door) and bake 10 more minutes until popovers are tall, popped over, and deep golden brown.
06 - Remove from oven, pierce tops with a knife to release steam. Remove from pan, split open, and serve with butter.

# Notes:

01 - Room temperature ingredients are crucial for maximum rise
02 - Don't open the oven door during baking or popovers may collapse
