Chicken Zucchini Corn Burgers (Print Version)

# Ingredients:

→ Greek Yogurt Sauce

01 - 1 cup Greek yogurt
02 - 2 teaspoons grated lemon zest
03 - 2 tablespoons fresh lemon juice
04 - 2 garlic cloves, minced
05 - 1 tablespoon olive oil
06 - ½ teaspoon salt

→ Burgers

07 - 1 lb ground chicken
08 - 1 medium zucchini, coarsely chopped
09 - 1 ear fresh corn, husks and silk removed, kernels cut from cob
10 - ½ medium red bell pepper, finely diced
11 - 3 green onions, thinly sliced
12 - 1 large egg, lightly beaten
13 - ½ cup panko bread crumbs
14 - 2 tablespoons chopped cilantro
15 - 3 garlic cloves, minced
16 - 1 teaspoon ground cumin
17 - 1 teaspoon ground coriander
18 - 1 teaspoon salt
19 - ½ teaspoon freshly ground black pepper
20 - 3-4 tablespoons olive oil, for searing

→ Tomato-Cucumber Relish

21 - 1 pint cherry or grape tomatoes, quartered
22 - ⅓ medium seedless English cucumber, finely diced
23 - 2 green onions, finely sliced
24 - ¼ cup finely chopped fresh cilantro
25 - 1 garlic clove, minced
26 - Zest of 1 lemon
27 - 2 tablespoons fresh lemon juice
28 - Pinch of salt

# Instructions:

01 - Mix all sauce ingredients in a small bowl and refrigerate to chill.
02 - Preheat the oven to 425°F (220°C).
03 - In a large bowl, combine all burger ingredients except the oil. Mix thoroughly with your hands and form the mixture into patties of your desired size.
04 - Heat a large frying pan over medium heat and add enough oil to cover the bottom. Once hot, sear the patties for about 2 minutes per side until golden brown.
05 - Transfer the seared patties to a baking sheet and bake for 7-10 minutes, or until the internal temperature reaches 165°F (74°C).
06 - Combine all relish ingredients in a medium-sized bowl and stir gently to mix evenly.
07 - Serve burgers with Homemade Flour Tortillas, pita bread, basmati rice, mashed potatoes, or pasta. Garnish with prepared Greek yogurt sauce and tomato-cucumber relish.
