Cut ends off oranges, score peel lengthwise, remove in sections. Cut into 1/4-inch strips.

Boil peels in fresh water twice, 10 minutes each time. Drain and rinse between.

Simmer peels in sugar syrup 40-45 minutes until translucent.

Drain peels, let dry 30 minutes on rack.
05 -
Toss in remaining sugar.

Let dry 24 hours at room temperature.
