Candied Orange Peel (Print Version)

# Ingredients:

01 - 4 navel oranges (3 pounds).
02 - 4 cups granulated sugar.

# Instructions:

01 - Cut ends off oranges, score peel lengthwise, remove in sections. Cut into 1/4-inch strips.
02 - Boil peels in fresh water twice, 10 minutes each time. Drain and rinse between.
03 - Simmer peels in sugar syrup 40-45 minutes until translucent.
04 - Drain peels, let dry 30 minutes on rack.
05 - Toss in remaining sugar.
06 - Let dry 24 hours at room temperature.

# Notes:

01 - Trim thick pith to 1/8 inch.
02 - Use wide pot to prevent splatter.
03 - Don't rush candying process.
