Creamy Sausage Pasta (Print Version)

# Ingredients:

01 - 10.5 oz (300 g) pasta.
02 - 1 tablespoon olive oil.
03 - 1 lb (450 g) pork or beef sausages.
04 - 1 large shallot, finely chopped.
05 - 1 pointed red pepper, sliced.
06 - 2 large garlic cloves, finely chopped.
07 - ½ tablespoon dried oregano.
08 - 3 tablespoons Cajun seasoning.
09 - 2 tablespoons tomato paste.
10 - ½ cup (100 g) low-fat cream cheese.
11 - ⅓ cup (30 g) grated Parmesan.
12 - 2-3 tablespoons fresh parsley, chopped.
13 - Salt and freshly ground black pepper to taste.

# Instructions:

01 - Cook pasta in salted water according to package. Reserve 2 cups pasta water.
02 - Fry sausage 4-5 minutes breaking it up. Add shallot and pepper until softened.
03 - Add garlic, oregano, and Cajun seasoning. Cook 1 minute.
04 - Add tomato paste and 1 cup pasta water. Add cream cheese until melted.
05 - Toss with pasta, Parmesan and parsley. Season and serve.

# Notes:

01 - Reserve pasta water for sauce.
02 - Can use pork or beef sausage.
03 - Adjust Cajun seasoning for heat level.
