In a small pan, warm the shredded brisket with bourbon, maple syrup, and BBQ sauce over medium heat. Stir and cook for 3-5 minutes until warmed through and coated in sauce. Set aside.

Lay 2 waffles on a cutting board. Top each with cheese, then a generous layer of the bourbon-maple brisket. Add pickles or caramelized onions if using. Top with another slice of cheese and cover with remaining waffles.

Heat a skillet or griddle over medium heat and melt a little butter. Place the wafflewiches in the pan and press down gently with a spatula. Cook 3-4 minutes per side or until the waffles are golden and crispy and the cheese has melted.
