Blue Christmas Truffles (Print Version)

# Ingredients:

01 - 8 oz (225g) cream cheese, softened.
02 - 12 oz (340g) white chocolate chips.
03 - 1/2 tsp vanilla extract.
04 - Blue gel food coloring.
05 - 1/2 cup (100g) blue or white sprinkles.
06 - Optional Decorations:.
07 - - Edible glitter.
08 - - Snowflake sprinkles.

# Instructions:

01 - Melt white chocolate in microwave in 30-second bursts, stirring between. Cool slightly.
02 - Beat cream cheese until smooth. Mix in melted chocolate and vanilla.
03 - Add blue food coloring, mix until even color.
04 - Chill 2-3 hours until firm.
05 - Roll into 1-inch balls, place on lined baking sheet.
06 - Coat in sprinkles, pressing gently to stick.
07 - Add optional glitter or snowflake sprinkles.
08 - Chill 30 minutes to set.

# Notes:

01 - Can add peppermint or almond extract.
02 - Option to dip in melted white chocolate instead of sprinkles.
03 - Keeps 5 days in fridge.
04 - Can be frozen up to 3 months.
