Preheat oven to 190°C and grease a 23x33 cm baking dish.

In a skillet over medium heat, cook sausage until deeply browned and fully cooked through. Drain excess fat and set aside.

Melt butter in the same skillet. Whisk in flour and cook for 1–2 minutes until lightly golden. Gradually add 600ml milk, stirring constantly until gravy thickens, about 5–7 minutes. Season with salt, pepper, and a pinch of red pepper or paprika if desired. Return sausage to the gravy and remove from heat.

Cut biscuits into quarters and scatter evenly in the prepared baking dish. Pour sausage gravy evenly over biscuits.

In a bowl, whisk eggs with 125ml milk, salt, and black pepper. Pour egg mixture over the sausage gravy layer.

Sprinkle cheddar cheese over the entire surface. Bake uncovered for 35–40 minutes until golden and eggs are set.

Allow casserole to rest 5–10 minutes before slicing. Serve warm, garnished with hot sauce or fresh herbs if desired.
