Healthy Banana Bread (Print Version)

# Ingredients:

01 - 3 medium-large very ripe bananas (1 cup mashed).
02 - 3 large eggs.
03 - 1/4 cup any sweetener (maple syrup recommended).
04 - 1/4 cup any mild oil or melted butter.
05 - 1 teaspoon pure vanilla extract.
06 - 1 teaspoon cinnamon.
07 - 1 teaspoon baking soda.
08 - 1 teaspoon baking powder.
09 - 1/4 teaspoon salt.
10 - 3 cups almond flour (not almond meal).
11 - Cooking spray.

# Instructions:

01 - Preheat oven to 350°F. Line 9x5 metal loaf pan with parchment or spray bottom and lower sides.
02 - Mash bananas, then whisk with eggs, sweetener, oil, vanilla and spices/leaveners.
03 - Gently stir in almond flour with spatula until combined.
04 - Pour into pan and bake 50 minutes until toothpick clean.
05 - Cool in pan 10 minutes, then remove to rack to cool completely before slicing.

# Notes:

01 - Use metal pan for best rising.
02 - Can use any liquid or dry sweetener.
03 - Freezes well up to 3 months unsliced.
