Vegan Lentil Soup (Print Version)

# Ingredients:

01 - 2 cups dried lentils.
02 - 3 carrots, sliced.
03 - 3 celery stalks, sliced.
04 - 1 large onion, diced.
05 - 3 garlic cloves, minced.
06 - 14.5 ounces diced tomatoes.
07 - 6 cups vegetable broth.
08 - 4 cups spinach.
09 - 1 teaspoon cumin.
10 - 1 teaspoon coriander.
11 - 1 teaspoon paprika.
12 - Salt and pepper.
13 - 1 lemon, juiced.

# Instructions:

01 - Chop vegetables, rinse lentils.
02 - Add all ingredients except spinach and lemon to crockpot.
03 - Cook on low 6-8 hours or high 3-4 hours.
04 - Blend half the soup for creamier texture.
05 - Add spinach until wilted, stir in lemon juice.
