Cornmeal Waffles (Print Version)

# Ingredients:

01 - 1 tablespoon apple cider vinegar.
02 - 1 cup unsweetened almond milk.
03 - 2 cups yellow cornmeal.
04 - ⅓ cup cornstarch.
05 - ¼ cup granulated sugar.
06 - 1 teaspoon kosher or sea salt.
07 - 1 tablespoon baking powder.
08 - 6 tablespoons aquafaba (chickpea liquid).
09 - 6 tablespoons neutral oil.
10 - 2 teaspoons vanilla extract.
11 - Cooking spray for waffle iron.

# Instructions:

01 - Mix apple cider vinegar with almond milk and let sit to curdle.
02 - Whisk together cornmeal, cornstarch, sugar, salt, and baking powder in a bowl.
03 - In separate bowl, whisk aquafaba, oil, almond milk mixture, and vanilla.
04 - Pour wet ingredients into dry ingredients and whisk until well combined.
05 - Pour ⅓-½ cup batter into preheated, greased waffle iron. Cook about 6 minutes until golden.
06 - Place cooked waffles on wire rack in 200°F oven while making remaining batch.

# Notes:

01 - Can be made ahead and reheated.
02 - Keep warm in oven at 200°F.
03 - Great with maple syrup or fresh fruit.
