→ Seafood Preparation

08 - 8 large shrimp or 2 lobster tails
09 - Salt, to taste
10 - Freshly ground black pepper, to taste
11 - 1/2 teaspoon paprika
12 - 2 tablespoons unsalted butter
13 - 2 cloves garlic, minced
14 - Juice of 1/2 lemon

# Instructions:

01 - Pat steaks dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
02 - Heat olive oil in a large skillet over high heat. Add steaks and sear for 2 to 3 minutes per side for medium-rare, adjusting time for preferred doneness.
03 - Reduce heat to medium-low. Add 2 tablespoons butter, smashed garlic, and thyme or rosemary. Spoon the melted butter over the steaks as they finish cooking for 1 to 2 minutes.
04 - Transfer steaks to a platter and let them rest for 5 minutes to retain juices.
05 - For shrimp: Peel, devein, and pat dry. Season with salt, pepper, and paprika. For lobster tails: Split tails lengthwise to expose the flesh and season lightly with salt and paprika.
06 - In a separate skillet, melt 2 tablespoons butter over medium heat. Add minced garlic and sauté until aromatic. Add shrimp and cook 2 to 3 minutes per side, or add lobster tails and cook 4 to 5 minutes, basting regularly with the garlic butter.
07 - Squeeze the juice of half a lemon over the cooked seafood and mix gently to coat.
08 - Arrange steaks and seafood on plates. Garnish with fresh herbs and lemon wedges if desired. Serve with your choice of sides.

# Notes:

01 - For optimum sear, avoid overcrowding the pan and use dry, room-temperature proteins.
02 - Try clarified butter for the seafood to deepen flavor.
03 - Experiment with steak cuts or substitute seafood such as scallops for variety.
