Tuscan Chicken Pasta (Print Version)

# Ingredients:

→ Chicken

01 - 2 chicken breasts (1 pound)
02 - 3 tablespoons olive oil
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon kosher salt
06 - ½ teaspoon black pepper

→ Pasta and Sauce

07 - 8 ounces rigatoni pasta
08 - 4 tablespoons unsalted butter
09 - ¼ cup shallot, diced
10 - ¼ cup sun-dried tomatoes
11 - 1 teaspoon minced garlic
12 - 2 tablespoons tomato paste
13 - 1 ½ cups heavy cream
14 - 1 ½ cups milk
15 - 1 cup fresh spinach
16 - 1 cup parmesan cheese
17 - 1 cup cherry tomatoes

# Instructions:

01 - Season chicken with oil and spices. Sear in skillet, then bake at 350°F until 165°F internal.
02 - Boil rigatoni in salted water until al dente according to package.
03 - In same skillet, cook shallots and sun-dried tomatoes in butter. Add garlic and seasonings.
04 - Add cream, milk, spinach, cheese, and tomatoes. Simmer until thickened.
05 - Toss pasta in sauce, top with sliced chicken, extra cheese, and parsley.
