Creamy Tomato Gnocchi Soup (Print Version)

# Ingredients:

→ Base

01 - 1 tbsp extra virgin olive oil
02 - 1 medium yellow onion, diced
03 - 4 cloves garlic, minced
04 - 28 oz can fire roasted tomatoes
05 - 1 1/2 cups vegetable broth

→ Seasonings

06 - 1/4 tsp salt
07 - 1 tbsp brown sugar
08 - 1/4 tsp red pepper flakes

→ Finishing

09 - 1 cup coconut milk
10 - 16 oz package gnocchi
11 - 1 cup fresh basil

# Instructions:

01 - Cook onion in olive oil 3-4 minutes, add garlic and cook until fragrant.
02 - Add tomatoes, broth, and seasonings. Boil, then simmer covered 10 minutes.
03 - Carefully blend with immersion blender to desired consistency.
04 - Add coconut milk, gnocchi, and basil. Cook 3-4 minutes until gnocchi floats.

02 - Don't overcook gnocchi
03 - Not suitable for freezing
