Thai Corn Fritters (Print Version)

# Ingredients:

01 - 10.5 ounces fresh sweet corn.
02 - 1 tablespoon red curry paste.
03 - 1 teaspoon fish sauce or salt.
04 - 1.5 cups cornstarch or rice flour.
05 - 1 egg.
06 - 1/2 cup ice cold water.
07 - 4 kaffir lime leaves, sliced.

# Instructions:

01 - Combine flour with corn, fish sauce, lime leaves, curry paste, egg.
02 - Slowly mix in ice-cold water.
03 - Drop spoonfuls into hot oil, rinsing spoon between scoops.
04 - Fry until golden and crisp, turning occasionally.
05 - Remove to paper towels to drain excess oil.

02 - Keep fritters small.
03 - Use neutral oil.
