Sweet Spicy Garlic Steak Pasta (Print Version)

# Ingredients:

→ For the Steak

01 - 450 g flank steak or sirloin, thinly sliced against the grain
02 - 15 ml soy sauce
03 - 8 g cornstarch
04 - Fine sea salt, to taste
05 - Freshly ground black pepper, to taste

→ For the Pasta and Sauce

06 - 225 g fettuccine, linguine, or spaghetti
07 - 30 ml olive oil, divided
08 - 5–6 cloves garlic, minced
09 - 0.25 g red pepper flakes, or to taste
10 - 60 ml low-sodium soy sauce
11 - 25 g brown sugar or 30 g honey
12 - 15 ml rice vinegar or apple cider vinegar
13 - 15 ml sriracha or chili garlic sauce, adjusted to taste
14 - 14 g butter, optional, for richness
15 - 120 ml reserved pasta water
16 - Chopped green onions, for garnish
17 - Sesame seeds, for garnish

# Instructions:

01 - Combine sliced steak with soy sauce, cornstarch, a pinch of salt, and pepper in a bowl. Allow to marinate for 10 to 15 minutes while preparing other components.
02 - Boil the pasta in generously salted water until al dente. Reserve 120 ml of the cooking water before draining the pasta; set aside.
03 - Heat 15 ml olive oil in a large skillet over medium-high heat. Arrange steak strips in a single layer and sear for 2 to 3 minutes per side until browned and just cooked through. Work in batches if necessary. Transfer steak to a plate and set aside.
04 - Reduce heat to medium in the same skillet. Add remaining 15 ml olive oil and minced garlic; sauté until aromatic, about 30 seconds. Incorporate red pepper flakes, soy sauce, brown sugar or honey, vinegar, and sriracha. Stir and let simmer for 1 to 2 minutes.
05 - Return cooked pasta and steak to the skillet. Add a splash of reserved pasta water, tossing well to coat all ingredients with sauce. Simmer for 1 to 2 minutes to meld flavors. Stir in butter for additional richness if desired.
06 - Plate the pasta and beef, then top generously with chopped green onions and sesame seeds. Add extra chili sauce for additional heat, if preferred.

01 - For an ultra-tender dish, substitute ribeye or New York strip for the steak.
02 - Add broccoli, snap peas, or bell peppers for more vegetables and texture.
03 - To achieve a creamier mouthfeel, stir in a splash of cream or cream cheese before serving.
04 - To moderate the heat, omit the sriracha and red pepper flakes for a gentler sweet garlic flavor.
