Classic holiday side dish (Print Version)

# Ingredients:

→ For the Mashed Sweet Potatoes

01 - 4 large sweet potatoes
02 - ½ cup granulated sugar
03 - 1 teaspoon kosher salt
04 - 1 teaspoon vanilla extract
05 - 2 large eggs
06 - ½ cup unsalted butter, melted

→ For the Streusel Topping

07 - 1 cup light brown sugar, packed
08 - ½ cup all-purpose flour
09 - 1 cup chopped pecans
10 - ½ cup unsalted butter, melted

# Instructions:

01 - Prepare the sweet potatoes using your preferred method until they're soft. You can bake them at 400°F for one hour, microwave them (pierced with a fork) for about 15 minutes, or peel and boil them for 30 minutes.
02 - Preheat your oven to 375°F. Spray a 2-quart baking dish with nonstick spray (coconut oil spray works well). Set the prepared dish aside.
03 - In a large bowl, combine the cooked sweet potatoes, granulated sugar, kosher salt, vanilla extract, eggs, and melted butter. Beat with an electric mixer for 4-5 minutes until the mixture becomes smooth and fluffy.
04 - Pour the sweet potato mixture into your prepared baking dish. Bake in the preheated oven for 25 minutes.
05 - While the sweet potatoes are baking, make the streusel topping. In a small bowl, combine the packed brown sugar, all-purpose flour, chopped pecans, and melted butter. Mix everything together with a fork until crumbly. Set aside.
06 - Once the sweet potato mixture has baked for 25 minutes, remove it from the oven. Sprinkle the streusel topping evenly over the sweet potato layer. Return the dish to the oven and bake for an additional 10-15 minutes, until the streusel becomes lightly browned.
07 - The casserole can be served immediately, or covered with foil to keep warm and served within 30 minutes.

# Notes:

01 - For a traditional Ruth's Chris style topping, use melted butter in the streusel. For a more crumbly texture, use softened butter instead.
02 - This casserole can be partially prepared ahead of time: bake for the initial 25 minutes, add the streusel topping, then refrigerate. When ready to serve, bake for about 20 minutes until heated through and the topping is browned.
03 - You can also bake the casserole completely ahead of time and keep it warm, covered with foil, for up to 30 minutes while preparing the rest of your meal.
