Spring Kolaches (Print Version)

# Ingredients:

01 - 1/2 cup + 3 tbsp unsalted butter.
02 - 1/2 cup whole milk.
03 - 1/2 cup full-fat sour cream.
04 - 1/3 cup granulated sugar.
05 - 2 1/4 tsp active dry yeast.
06 - 3 1/4 cups all-purpose flour.
07 - 1 tsp lime zest.
08 - 1 tsp kosher salt.
09 - 2 large eggs.
10 - 1 cup diced strawberries.
11 - 1 cup diced rhubarb.
12 - 3 tbsp granulated sugar.
13 - 1 tbsp cornstarch.
14 - 1/4 tsp ground ginger.
15 - Pinch kosher salt.
16 - 1 tbsp lime juice.
17 - 1/4 cup all-purpose flour.
18 - 1/4 cup granulated sugar.
19 - 1/8 tsp ground ginger.
20 - 1 tbsp unsalted butter, melted.

# Instructions:

01 - Heat butter, milk, sour cream to 115°F.
02 - Add sugar and yeast, let sit 5 minutes.
03 - Mix in flour, zest, salt, eggs.
04 - Knead 5 minutes, chill overnight.
05 - Cook filling ingredients 12-15 minutes.
06 - Roll dough 1/2-inch thick.
07 - Cut rounds, make wells, fill.
08 - Top with crumble mixture.
09 - Rise 30 minutes.
10 - Bake at 350°F for 18-20 minutes.

# Notes:

01 - Traditional Czech pastry. Requires overnight chilling. Can use different fruit fillings.
