Sweet Citrus Strawberry Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 box strawberry cake mix
02 - 1 box lemon cake mix
03 - 4 large eggs, divided (2 per cake mix)
04 - ½ cup vegetable oil, divided (¼ cup per cake mix)
05 - 1 teaspoon vanilla extract, divided

→ Optional Topping

06 - Powdered sugar for dusting

# Instructions:

01 - In two separate large mixing bowls, combine each cake mix with 2 eggs, ¼ cup vegetable oil, and ½ teaspoon vanilla extract. Stir each mixture until you have smooth, well-combined doughs.
02 - Take a small scoop of each dough (strawberry and lemon) and gently press them together to form a marbled ball. Roll lightly to combine while keeping the colors distinct - don't overmix!
03 - Heat your oven to 350°F (175°C). Line your baking sheets with parchment paper and arrange the cookie balls about 2 inches apart.
04 - Bake for 8-10 minutes, until the edges are set but the centers still look slightly soft. They'll continue cooking as they cool.
05 - Let the cookies rest on the baking sheet for 2 minutes, then transfer to a wire rack. Once cooled, dust with powdered sugar if you'd like an extra sweet touch.

# Notes:

01 - These cookies stay fresh in an airtight container for up to 5 days
02 - The dough can be made ahead and refrigerated for up to 2 days
03 - For best results, don't overbake - they should be slightly soft in the center when removed from the oven
