Strawberry Cheesecake Bars (Print Version)

# Ingredients:

01 - 1 1/2 cups graham cracker crumbs.
02 - 1/4 cup granulated sugar.
03 - 1/2 cup unsalted butter, melted.
04 - 2 packages (8 oz each) cream cheese, softened.
05 - 1 cup granulated sugar.
06 - 1/2 cup sour cream.
07 - 2 large eggs.
08 - 1 teaspoon vanilla extract.
09 - 2 cups fresh strawberries, hulled and chopped.
10 - 1/4 cup granulated sugar.
11 - 1 tablespoon lemon juice.
12 - 1 tablespoon cornstarch mixed with 2 tablespoons water.

# Instructions:

01 - Heat oven to 325°F (163°C).
02 - Line 9x13-inch pan with parchment.
03 - Mix crust ingredients, press into pan.
04 - Bake crust 10 minutes, cool.
05 - Beat cream cheese until smooth.
06 - Add sugar, sour cream, vanilla.
07 - Add eggs one at a time.
08 - Pour over cooled crust.
09 - Bake 35-40 minutes until set.
10 - Cool to room temperature.
11 - Refrigerate 4 hours.
12 - Cook strawberries, sugar, lemon juice.
13 - Add cornstarch mixture, cook until thick.
14 - Cool topping completely.
15 - Spread over chilled cheesecake.
16 - Cut into bars and serve.

01 - Store in refrigerator up to 5 days. Can be frozen without topping for longer storage.
