Steak Bites & Queso (Print Version)

# Ingredients:

01 - 1 1/2 pounds sirloin steak, cut into bite-sized pieces.
02 - 2 tablespoons olive oil.
03 - 1 tablespoon unsalted butter.
04 - 3 cloves garlic, minced.
05 - Salt and pepper to taste.
06 - Fresh parsley for garnish.
07 - 2 cups shredded cheddar cheese.
08 - 1 cup shredded Monterey Jack cheese.
09 - 1 cup diced tomatoes with green chilies, drained.
10 - 1/2 cup diced jalapeƱos.
11 - 1/2 cup half-and-half or heavy cream.
12 - 1/2 teaspoon smoked paprika.
13 - 1/4 teaspoon garlic powder.
14 - 1/4 teaspoon onion powder.
15 - Green onions for garnish.

# Instructions:

01 - Season bite-sized steak pieces with salt and pepper.
02 - Sear in hot oil 2-3 minutes per side until caramelized, then add butter and garlic.
03 - Cook one more minute with garlic butter, garnish with parsley.
04 - Combine cheeses, tomatoes, jalapeƱos in saucepan over low heat.
05 - Stir in half-and-half and seasonings until smooth.
06 - Transfer queso to bowl, garnish with green onions, serve with steak bites.
