Spinach Feta Potatoes (Print Version)

# Ingredients:

01 - 4 russet potatoes.
02 - 2 tablespoons olive oil.
03 - 1 teaspoon kosher salt.
04 - 1 shallot, chopped.
05 - 3 garlic cloves, minced.
06 - 2 green onions, chopped.
07 - ½ teaspoon dried dill.
08 - 4 cups fresh spinach.
09 - ½ teaspoon salt.
10 - Black pepper to taste.
11 - ½ cup sour cream.
12 - ¼ cup milk.
13 - 4 ounces feta cheese.
14 - Parmesan for garnish.
15 - Chives for garnish.

# Instructions:

01 - Heat oven to 425°F. Pierce potatoes, rub with oil and salt.
02 - Bake potatoes 60-70 minutes until tender.
03 - Sauté shallot, garlic, onions, dill. Add spinach until wilted.
04 - Scoop potato flesh, mix with spinach, sour cream, milk, feta.
05 - Fill potato skins, bake at 400°F for 15-20 minutes.
06 - Garnish with Parmesan and chives.

# Notes:

01 - Can use goat cheese instead of feta.
02 - Kale or chard can replace spinach.
03 - Don't overmix to avoid gummy texture.
