Heat oven to 425°F. Pierce potatoes, rub with oil and salt.

Sauté shallot, garlic, onions, dill. Add spinach until wilted.

Scoop potato flesh, mix with spinach, sour cream, milk, feta.

Fill potato skins, bake at 400°F for 15-20 minutes.

Garnish with Parmesan and chives.
