11 - 2 cups fresh spinach leaves, washed
12 - 1 cup shredded mozzarella cheese
13 - 0.25 cup grated Parmesan cheese
14 - Fresh parsley, chopped, for garnish
15 - Extra mozzarella cheese, for topping (optional)

# Instructions:

01 - Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain while reserving 120 ml (about 0.5 cup) of the cooking water.
02 - Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 2 to 3 minutes until softened. Stir in minced garlic and cook for 30 seconds, allowing it to become fragrant.
03 - Stir in crushed tomatoes, tomato paste, dried oregano, red chili flakes (if using), salt, and black pepper. Simmer for 4 to 5 minutes, stirring occasionally. If the sauce thickens excessively, incorporate a splash of reserved pasta water.
04 - Add fresh spinach leaves to the sauce and cook for 1 to 2 minutes, stirring, until just wilted.
05 - Add the drained pasta to the skillet and toss to coat. Sprinkle in mozzarella cheese and grated Parmesan. Stir until cheeses are fully melted and the sauce is creamy.
06 - Divide into serving bowls, top with extra mozzarella cheese if desired, and garnish with chopped parsley. Serve immediately while hot and cheesy.
