Spicy Beef Ramen Soup (Print Version)

# Ingredients:

→ Beef & Marinade

01 - 7 oz sirloin steak, chilled
02 - 2 tbsp soy sauce
03 - 2 tbsp mirin
04 - 1 tsp sugar
05 - ½ tbsp Doubanjiang or chilli oil (optional)

→ Broth Base

06 - 2 tbsp neutral oil
07 - 2 cloves garlic, grated
08 - 2 scallions (white parts), grated
09 - 2 tsp ginger, grated
10 - 2 tbsp miso paste
11 - 1 tbsp tahini
12 - 1 tbsp sesame oil
13 - 2.5 cups beef stock

→ Toppings

14 - 2 portions ramen noodles
15 - 3 cups spinach
16 - 1 cup mushrooms
17 - Scallions (green parts), sliced
18 - 2 soft-boiled eggs (optional)
19 - Toasted sesame seeds

# Instructions:

01 - Slice cold steak thinly, combine with marinade ingredients. Refrigerate 30 minutes to overnight.
02 - Fry mushrooms until brown, set aside. Wilt spinach, set aside. Cook marinated beef until brown.
03 - Fry aromatics, add miso and seasonings. Add stock, simmer 10 minutes.
04 - Cook ramen slightly underdone according to package instructions.
05 - Add noodles to bowls, pour hot broth. Top with beef, vegetables, eggs, and garnishes.
