Southern Style Honey Butter Cornbread Poppers (Print Version)

# Ingredients:

01 - 1 cup cornmeal
02 - 1 cup all-purpose flour
03 - 1/4 cup sugar
04 - 1 tablespoon baking powder
05 - 1/2 teaspoon salt
06 - 1 cup buttermilk
07 - 1/2 cup melted butter
08 - 1/4 cup honey
09 - 2 eggs

# Instructions:

01 - Preheat oven to 400°F (200°C) and grease a mini muffin tin.
02 - In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
03 - In a separate bowl, whisk together the buttermilk, melted butter, honey, and eggs until smooth.
04 - Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
05 - Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
06 - Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
07 - Let the cornbread poppers cool slightly before serving.

# Notes:

01 - For a bit of extra flavor, you can add a pinch of cayenne pepper or finely chopped jalapeños to the batter.
02 - These cornbread poppers are delicious served with extra honey or a dollop of butter on top.
