Shrimp Yaki Udon Noodles (Print Version)

# Ingredients:

→ Main ingredients

01 - ½ lb shrimp
02 - 2 servings udon noodles (vacuum-packed)
03 - 1 cup carrot, julienned
04 - 1 cup shiitake mushrooms, sliced
05 - ½ medium onion, sliced
06 - 2 stalks green onion/scallion, cut into 2-inch pieces
07 - 2 cloves garlic, sliced

→ Sauce

08 - 2 tbsp dark soy sauce
09 - 2 tbsp oyster sauce
10 - 1 tbsp brown sugar
11 - ½ tsp rice vinegar

# Instructions:

01 - In a small mixing bowl, combine all the sauce ingredients. Mix well and set aside.
02 - Heat cooking oil over medium-high heat, add shrimp and stir-fry until both sides change color. Remove from the pan.
03 - Add cooking oil to the same pan, stir-fry onion and garlic for 2 minutes, then add carrot and mushroom. Cook until the carrot softens, stirring occasionally.
04 - Add udon noodles, cooked shrimp, and the sauce mixture to the pan. Toss together until well combined. Add scallions and stir for 1 minute.
05 - Place the yaki udon on a serving plate and serve immediately.

# Notes:

01 - Make the stir-fry sauce ahead of time to simplify adding it to the udon noodles later.
02 - Separate the noodles before adding them to the stir-fry. Packaged noodles often stick together, so loosen them up by placing them in hot water.
03 - If you have a wok, use it for even heat distribution, resulting in perfectly stir-fried noodles.
04 - Serve immediately for the best taste as noodles are at their prime when freshly prepared.
