In a small mixing bowl, combine all the sauce ingredients. Mix well and set aside.

Heat cooking oil over medium-high heat, add shrimp and stir-fry until both sides change color. Remove from the pan.

Add cooking oil to the same pan, stir-fry onion and garlic for 2 minutes, then add carrot and mushroom. Cook until the carrot softens, stirring occasionally.

Add udon noodles, cooked shrimp, and the sauce mixture to the pan. Toss together until well combined. Add scallions and stir for 1 minute.

Place the yaki udon on a serving plate and serve immediately.
